Shimoyamitenae Izuru (霜止出苗) is the stage for one of Sapporo's most creative culinary talents. At an intimate, six-seat counter, the chef presents a personal, genre-less vision of cooking that transforms Hokkaido's exceptional produce into surprising new forms. The style is broadly European, but the execution is entirely unique, resulting in a tasting menu that challenges and delights in equal measure.

Guests consistently praise the technical precision and bold creativity. Signature dishes that draw acclaim include a terrine of kohada (gizzard shad), a spring roll filled with nishin (herring) and its roe (kazunoko), and an exceptional uni (sea urchin) soba. The house-made charcuterie, which often features aged and wild meats, is another highlight, as are preparations of local horsehair crab. Portions are noted to be generous, and the experience is backed by an exceptional wine list curated by an attentive sommelier.

However, the experience can be inconsistent. Several reviewers, both Japanese and non-Japanese, find the seasoning quite salty and the multi-course menu very heavy. The service style is also a point of contention: the chef is famously taciturn and focused on his work, and some English-speaking guests have reported feeling ignored or treated rudely. A few diners have also found shell fragments in crab dishes or noted unclear extra charges on their bill.

Reviewers in 2023–2025 reported the omakase menu costs between ¥30,000 and ¥39,999 for both lunch and dinner. A recent bill for two people was ¥94,000, while another for two with wine pairing came to approximately ¥108,500. It offers good value for those seeking a bold, ingredient-driven experience, but may disappoint those who prefer lighter seasoning and warm, effusive hospitality.

  • Booking: Reservations are essential and should be made via SMS. This is a tiny restaurant with fixed start times; walk-ins are not possible.
  • Getting There: Located in Sapporo, a 5-minute walk from Nakajima Koen Station. The entrance is discreet.
  • Seating: A 6-seat counter where guests remove their shoes. Private rooms are also available. Punctuality is expected.
  • Payment: Major credit cards (Visa, Master, JCB, AMEX, Diners, UnionPay) are accepted. Electronic money and QR code payments are not.
  • Children: Children are welcome, but you must inform the restaurant via SMS when booking.
