Sushi Josuke (寿志 城助) is a stage for a singular vision of Edo-style sushi. In an intimate eight-seat counter setting in Kobe's Kitanocho district, the chef presents an omakase built around firm, red-vinegar (akazu) shari. The temperature and timing of each piece are obsessively controlled, designed to be eaten the moment they are placed before you. The experience is as much about this precision as it is the highly worked and unusual otsumami (appetizers) that precede the nigiri, such as ikura cured in miso and sake lees, or a rich monkfish liver mousse.
Guests consistently praise the distinctive shari, the chef's delicate finishing work, and the well-curated sake list. Favourite items frequently mentioned include anago (sea eel), kisu (sillago), sumi-ika (spineless cuttlefish), and nihamaguri (simmered clam), alongside seasonal highlights like uni and toro. However, the experience comes with strict rules. A steady stream of reviews note the chef's brusque manner and a formal atmosphere, and photography is strictly forbidden. The omakase is also a significant time commitment, typically lasting three to four hours.
The fixed omakase menu costs around ¥22,000 per person, based on recent diner reports. One party of two paid ¥35,000 with drinks, while others noted that a full meal with extra pieces and several glasses of sake still came in under ¥30,000. Most reviewers consider this excellent value for the quality of the ingredients and the intricacy of the preparations, provided you are prepared for the long, rule-driven format.
