Tan (但) has earned a reputation not just for its full tasting menu, but for what many consider the main event: its desserts. The restaurant is celebrated for a level of craftsmanship that extends from savoury courses to its signature sweets, particularly the seasonal kakigori (shaved ice) and warm, table-side warabimochi.

Guests consistently praise the imaginative, ever-changing courses. The omakase often opens with a small sukiyaki beef rice bowl and features carefully prepared seafood like anago (sea eel), tai (sea bream), and abalone. However, the highlight for most is the finale. The kakigori, in generous portions with intense syrups made from fresh fruit like peach, melon, or figs, is a recurring favourite. The experience does come with challenges. Securing a reservation is difficult, with booking slots reportedly selling out almost instantly when they are released online each month. The restaurant is also said to be strict about punctuality, particularly for its single-start lunch service, with some reviewers noting that late arrivals may be treated as cancellations. While service is overwhelmingly praised, a small number of reports mention inconsistent or brusque treatment.

Reviewers in 2024–2026 reported paying around ¥11,000 for a sweet-focused lunch course. Individual kakigori servings cost between ¥1,900 (fig) and ¥3,800 (mango), while warabimochi was around ¥1,000–¥2,300.
