Kataori (片折) is a destination restaurant in Kanazawa, built around one of the purest expressions of Japanese culinary philosophy: the dashi. The experience centers on katsuobushi (dried bonito), shaved to order for each guest and combined with a meticulously prepared kombu stock. This focus on foundational flavor, paired with chef Takuya Kataori's daily sourcing of seafood from nearby ports like Himi and Noto, results in an omakase course of profound clarity and umami.

Guests consistently praise the exacting technique on display. Signature moments include the first clear dashi served as its own course, a stunning bowl of 'mizu-dama okra' (water-dot okra), and a succession of rice dishes to close the meal, such as rice with fresh katsuobushi and egg, steamed sushi with nodoguro (blackthroat seaperch), or chazuke with grilled ayu (sweetfish). The warm, measured service and the curated selection of ceramics are also frequently highlighted as integral parts of the serene experience.

The only recurring critiques are practical. With only eight counter seats and a single seating per service, reservations are notoriously difficult to secure, often months in advance. The atmosphere is quiet and focused, and some reviewers note house rules regarding photography. These are not flaws in the experience but hurdles for which a prospective diner should plan.

The omakase course is the only option. Reviewers in 2024–2026 reported paying between ¥47,000 and ¥57,000. One guest noted a bill of ¥47,553 for the course, totaling around ¥51,100 with drinks.
