Chuka Soba Takano (中華そば 髙野) has become a landmark in Yokohama for ramen enthusiasts, distinguished by its signature “Takano Water”. This is a chilled kelp (konbu) broth in which the noodles for its tsukemen are served, allowing diners to appreciate their texture and umami before they are ever dipped into the hot dipping broth. This simple but clever preparation changes the entire experience, as the kelp-coated noodles interact with the soup.

Guests consistently praise the Tokusei Tori Tsukemen (special chicken tsukemen) for this unique feature, as well as the deep, balanced flavour of the chicken broth. The bowls feature two types of chicken char-siu (thigh and breast), and the firm, thin noodles are widely complimented. Another standout is the Aedama, an extra portion of noodles tossed in a creamy porcini sauce that is served on its own, effectively acting as a second, distinct course.

The shop's popularity means there are downsides. Long queues are standard, often 30 to 60 minutes or more, especially on weekends. While most find the quality justifies the price, some reviewers note that recent price increases have made it feel expensive. A small number of diners find the texture of the kelp water unappealing, and there are occasional reports of an inconsistent, lukewarm, or overly oily bowl.

Despite this, most consider it excellent value. Reviewers in 2024–2026 reported paying around ¥1,900 for the special chicken tsukemen and ¥1,200–¥1,600 for the standard chicken ramen. The Aedama adds ¥300–¥400, meaning a full experience often costs over ¥2,000. Typical spend is between ¥1,000 and ¥2,000.
