Ginjo Ramen Kubota (吟醸らーめん 久保田) has earned a city-wide reputation for one dish: its miso tsukemen. This isn't a typical ramen bowl, but a dipping-style noodle dish where cold, exceptionally chewy noodles are served alongside a thick, hot dipping broth. The broth is the main event—a complex, potent blend of pork, seafood, and chicken with a deep miso base, studded with minced pork and carrying a distinct smoky umami flavour that has won it a spot in the Tabelog Top 100 Ramen awards for multiple years.
Visitors consistently praise this signature dish, often calling it the best tsukemen they've ever had. The texture of the noodles and the intensity of the broth are frequent highlights. After finishing the noodles, you can use the self-serve dashi pot on the counter to dilute the remaining broth into a warming soup (known as 'soup-wari'). While the miso tsukemen is the star, a shoyu ramen is also available.
The main drawback is the shop's popularity. Queues of 15 to 60 minutes are common, and the dining room is a tiny, 10-seat counter with little room for luggage. Some diners find the broth too rich or salty for their taste, and while most praise the dish, occasional reports mention a lukewarm serving or an overcooked egg. For big eaters, the regular portion might feel small.
Despite the wait, most consider it excellent value. Reviewers in 2024–2026 reported paying around ¥1,150–¥1,300 for the regular miso tsukemen, and ¥1,350–¥1,500 for a large portion with an egg. The shoyu ramen was noted at about ¥1,000. The typical spend for a meal is between ¥1,000 and ¥1,999.
- Getting There: Located on the 1st floor of the Fuji Man Building in Kyoto. It's a 7-minute walk from Gojo Station (Exit 8) or a 13-minute walk from Kyoto Station.
- Booking: Reservations are not accepted. Be prepared to queue, especially at peak times. Your whole party must be present to join the line.
- Payment: Cash only. You purchase a ticket from a vending machine before being seated. English guidance is available.
- Seating: There are only 10 counter seats. Space for luggage is very limited.
