Hiiragi Tei (ひいらぎ亭) is a dedicated yakitori workshop in Kyoto's Higashiyama district, focused on one thing: expertly grilling fresh Oumi jidori chicken over white charcoal. The small space is centered on a counter where the chef works with intense precision, searing each skewer to bring out the deep flavour of the high-quality, morning-slaughtered birds.

Guests consistently praise the freshness and depth of flavour, particularly the signature momo no tataki (lightly seared thigh) and the rich, creamy white-liver skewer (極上白肝). Other popular choices include heart (zuri), neck (seseri), and tail (bonjiri). Portions are known to be generous, and the pronounced charcoal aroma is a frequent highlight.
