They craft just three classic varieties: tsubuan (chunky red bean paste), koshian (silky-smooth strained bean paste), and kinako (dusted with roasted soybean powder). The secret lies in their unwavering tradition, using premium Hokkaido azuki beans and 100% Habutae mochi rice, all slow-cooked in a traditional kama hearth. The result, as countless reviewers attest, is a rice ball with perfect texture and an anko (bean paste) so moist and refined it's described as almost 'drinkable'.
