Sottaku Tsukamoto (啐啄 つか本) is a temple of refined Japanese cooking, hidden away in Kyoto's Gion district. Here, chef Tsukamoto practises a quiet but radical mastery of his craft, focusing on exceptionally pure dashi broths and restrained seasoning that allows the essence of each seasonal ingredient to shine. The experience is delivered at an intimate, L-shaped counter for just eight guests, with a strict no-photography rule that directs all attention to the chef's precise, unhurried work.
Reviewers consistently praise the depth and clarity of the broths, which may feature luxurious ingredients like soft-shell turtle (suppon). The meal unfolds as a perfectly paced sequence of seasonal highlights.
