Nomugi (野麦) is a restaurant with a singular focus: to perfect one dish. It serves only cold dipping soba, known as zaru soba, and has earned a loyal following for doing so. The noodles are made by hand, largely from buckwheat in a 9:1 ratio, and cut exceptionally fine. The result is a noodle with a firm, bouncy chew and a smooth feel, served in generous portions.

The experience is minimalist and traditional. A small complimentary starter of kiriboshi daikon (dried radish) arrives first, followed by the soba and a perfectly balanced dipping sauce (tsuyu). After the meal, you are served sobayu, the hot, nutrient-rich water the noodles were cooked in, to mix with the remaining tsuyu and drink as a broth. Guests consistently praise the texture of the noodles, the rich sobayu, and the warm, helpful service. A few small side dishes, like fresh yuba (tofu skin), are also available.

The main drawback is the shop's popularity. Long queues are standard, with waits of 20 to 60 minutes or more. The dining room is tiny, with just 12 seats at shared tables. The menu's narrow focus also means there is no hot soba, tempura, or other common accompaniments. Reviewers, however, overwhelmingly agree that the quality makes it worth the wait.

A typical lunch costs between ¥1,000 and ¥1,999. Reviewers recently paid ¥1,200 for a regular portion of zaru soba and ¥1,400 for a large. A side of yuba was ¥300. For the craft and portion size, it is considered excellent value.

  • Language: Staff are welcoming to international visitors, with some English spoken and a helpful English guide on how to eat soba.
