fish lab Uojuku (fish lab 魚熟) is not your typical food-court stall. Located within the bustling Shima no Eki Miyako market, it elevates the humble seafood bowl using sophisticated techniques usually found in more formal restaurants. The specialty here is local Miyako Island fish that undergoes a careful aging process (熟成, jukusei) to deepen its flavour and soften its texture. This is further enhanced by a signature smoking with sato-kibi (sugarcane) leaves and a unique bottled 'katsuobushi' oil used for finishing, creating layers of umami and aroma.

Guests consistently praise the seafood bowls, particularly the maguro-don (tuna bowl) and the mixed island seafood-don, which showcases a variety of local catches. The rich arajiru (fish-bone soup) and the rice topped with freshly shaved katsuobushi are also highlights, often accented with the bright, salty pop of umibudou (sea grapes). Reviewers frequently mention the friendly and helpful staff, with the chef sometimes communicating in English or Italian, making it an accessible choice for international visitors.

The main drawback for some is the setting; it’s a casual food-court stall with shared seating. Other minor complaints include popular dishes selling out early in the day and a few diners finding the signature smoky oil or garlic sauce a bit strong for children's palates. A small number of visitors also wished for larger fish portions or faster service during peak times.

Despite its informal nature, reviewers feel it offers excellent value. Recent visitors paid around ¥1,700 for a maguro-don and ¥2,000–¥2,300 for the island seafood-don. An arajiru soup set was noted at about ¥1,000. For the quality and unique preparation of the fish, it's considered a worthwhile experience for any seafood lover visiting Miyako Island.
