Japanese Cuisine Fuji (日本料理FUJI) is a temple to the seafood of Shizuoka, served in its purest form. The entire experience unfolds at a seven-seat counter, offering an intimate view of the chef's craft. The restaurant's reputation is built on a strict focus on sourcing the absolute best local fish, much of it from the renowned supplier Sasu e-Maeda, and preparing it with theatrical precision—from shaving katsuobushi to order to the live filleting of fish.
Guests consistently praise the exceptional quality of the seafood and the precise cooking. The signature dish, a white tilefish (amadai) prepared 'matsukasa-yaki' style with its scales crisped to a perfect crunch, is a recurring highlight. Other standouts include expertly prepared katsuo, kinmedai, jindō squid, and local eel. The counter-side theatre, such as the grating of fresh katsuobushi or toasting of sesame seeds, adds to the immersive experience. The meal is rounded out with generous finishing courses, with reviewers loving the choice between dishes like rice with katsuobushi and egg, or noodles with shirasu.
The main challenge is securing a seat. Bookings are notoriously difficult, often requiring reservations months in advance. The small, seven-seat counter and single start time for all guests mean the meal is a leisurely affair, typically lasting two to three hours. A few diners have noted the space can feel cramped.
The restaurant serves an omakase course only. Reviewers in 2024–2026 most often reported course prices around ¥19,800 or ¥23,200. With drinks and service, final bills typically fell between ¥25,000 and ¥38,000 per person; specific accounts mention a ¥29,500 total for a solo diner and ¥65,000 for two. Despite the cost, visitors overwhelmingly find it to be excellent value for the quality and unique experience.
