At amphis (アンフィス), an intimate six-seat counter in Nishi-Azabu, the chef stages a creative dialogue between classic French cuisine and the comforting flavours of Japanese Western-style food, or 'yōshoku'. The experience is personal and lively, with service directly from the chef across the counter in a tightly run performance.

The tasting menu is known for its theatricality and technical precision. Guests consistently praise a parade of signature dishes, starting with a six-piece amuse-bouche set. Other standouts include a rich pastry filled with beef, tongue and foie gras (BTA/BTF), a clever bouillabaisse reimagined as a hot croquette, a simple but intense onion soup, and a famously well-executed omurice (omelette rice) as one of the closing dishes. The adventurous and well-matched wine pairings are another highlight for many diners.

While overwhelmingly positive, some reviews note that dishes are served extremely hot, requiring caution. A minority of guests wished for deeper flavours behind the creative presentation.
