Hato (波濤) is an intimate, eight-seat counter in Kagurazaka, led by chef Daichi Kumagiri, that has quickly become one of Tokyo's most sought-after sushi reservations. The experience is a sophisticated omakase that combines elaborate tsumami (small appetiser plates) with traditional Edo-mae nigiri, showcasing the chef's deep background in Japanese cooking.

Guests consistently praise the tsumami, which are treated with the same reverence as the sushi. Dishes like the signature suppon (soft-shelled turtle) nyūmen noodles, a rich hamaguri clam broth, and precisely grilled items like aburi hamo (seared pike conger) demonstrate exceptional temperature control. The nigiri is equally lauded for its melt-in-the-mouth texture, with the chef adjusting the temperature and hardness of the shari (sushi rice) for each piece.
