What sets it apart is the dumpling itself: the house-made skin is noticeably thick and chewy, while the pork filling is coarse and chunky. This combination is served three ways—pan-fried until crisp on both sides (yaki-gyoza), boiled (sui-gyoza), and deep-fried (age-gyoza)—each offering a completely different textural experience that reviewers call addictive.
