Tonkatsu Tsuchimoto (とんかつ 土本) builds its menu around aged heritage pork. The list of breeds changes daily and can include LYB, Kobe Pork, the Mangalitsa-cross ZEITON and Saddleback. The meat is dry-aged for 14 days, then fried at a low temperature so it stays rosy inside and the fat melts. You can add two-piece portions of other breeds to compare cuts side by side. The restaurant was selected for the 2026 Tabelog 100 tonkatsu list.
Reviewers almost unanimously praise the tender, juicy meat and sweet fat. They single out the rich rib loin and the hirekaburi, a rare, lean cut from the end of the fillet. The condiments have their own following: kombu salt, wasabi kneaded with rock salt, and shichimi. Reviewers also often mention the clay-pot rice, a generous tonjiru (pork miso soup) and the white kakuni, which is salt-braised pork belly. Foreign guests repeatedly note that the owner explains the dishes and stops by the tables.
Price is the main complaint, and reviewers rate cost-performance below the food itself. Popular cuts sell out. One diner was seated after later arrivals and missed the cut they had come for. The rib loin can be heavy, a few found it slightly salty, and the coating is soft rather than crunchy. Two Taiwanese reviewers found the restaurant unfriendly to children, and one mentioned mosquitoes.
In 2026 reviewers paid ¥2,600 for the rosu katsu gozen (loin set) and ¥3,000–3,100 for the fillet or rib loin sets. Aged cuts ran ¥4,200–5,500, for example ¥5,500 for LYB rib loin. Half a kakuni was ¥500, yuzu menchi katsu ¥600 and the tasting course ¥6,000. A standard set costs about ¥2,600–3,100 at lunch or dinner. Expect ¥4,000–5,000 once you add aged breeds or extras.
The sets include one free refill each of rice, cabbage and tonjiru, and reviewers widely call them excellent value. The aged cuts are expensive for tonkatsu, but most reviewers felt the quality justified the price.
