Soba Kiri Kanbee (蕎麦切り かんべえ) is an intimate, eight-seat counter in Fukuoka dedicated to exploring the craft of buckwheat noodles. Run by a husband-and-wife team, the experience is personal and focused, staging a tasting menu that showcases soba in its many forms, from texture to temperature.

The main draw for many is the lunch tasting course, the Soba-zanmai-zen (reviewers paid around ¥2,970). This set guides you through soba-tofu and warm soba-gaki (a sort of buckwheat dumpling) before presenting multiple types of noodles, such as the slippery Nihachi (80% buckwheat) and the more robustly fragrant Juwari (100% buckwheat). The course is rounded out with freshly fried tempura or expertly grilled duck (yaki-gamo), both consistently praised by guests. Even the final soba-yu (the hot water the noodles were cooked in) is given special treatment, scented with yuzu or myoga. Simpler sets like the Kanbee-zen are also available for around ¥1,320–¥1,540.

The restaurant's tiny size is its main drawback; it fills up very quickly, and the kitchen can sell out of certain noodle types early in the service. A small minority of diners have also found the dipping sauce (tsuyu) a little too strong for their taste. Overall, however, reviewers find the lunch courses to be excellent value, while the pricier dinner service (typically ¥8,000+) is considered a fair price for the high level of craft and personal attention.

  • Booking: Reservations are essential for the popular lunch tasting course (Soba-zanmai-zen). For à la carte dishes at lunch or dinner, the restaurant serves guests on a first-come, first-served basis, but with only eight seats, arriving without a booking is risky. Due to past issues, international visitors are required to pre-pay when making a reservation.
