At a tiny, four-seat counter in Kitakyushu, the proprietor, known only as ‘BOSS’, delivers a one-of-a-kind tasting menu that changes themes regularly. The experience is built on deconstructing Indian, Thai, Chinese, and even Mediterranean culinary ideas and reassembling them into something wholly original.
