At Sushi Kougetsu (鮨 晄月), a young chef trained at the famed Tensushi offers a distinctive take on Kyushu-mae sushi. The experience is defined by his signatures: a memorable nigiri of dashi-marinated chūtoro (medium-fatty tuna), and a particular style of shari (sushi rice) made with red vinegar, often without sugar, that shapes the entire meal.
