Jingisukan Daruma Honten (成吉思汗だるま 本店) is the original 1954 flagship that started Sapporo's most famous grilled mutton tradition. Located in the bustling Susukino district, it offers a taste of Showa-era dining. The experience is built around a simple ritual: guests sit at a U-shaped counter, each with their own dome-shaped iron pan set over live charcoal. You grill slices of mature mutton yourself, letting the fat run down to baste onions and vegetables arranged at the pan's rim, before dipping it all in the house's secret soy-based tare sauce.

Reviewers consistently praise the quality of the meat, from the standard Jingisukan house cut to the premium Jouniku (上肉) and Hire (ヒレ) fillet, noting its rich flavour and lack of a gamey smell. The sweet, caramelised onions soaked in lamb fat are a highlight for many, as is the intense, smoky atmosphere that international visitors often call a quintessential Sapporo experience.

The authenticity comes with trade-offs. The small, 14-seat counter means long queues are the norm, and the space is tight. Ventilation is limited, so expect your clothes and hair to smell strongly of smoke. Portions are not large, and with vegetables and side dishes charged separately, the bill can add up if you're very hungry.   • Seating: There are only 14 counter seats. The space is very tight.
