At Ninomae (壱), a tiny six-seat counter in Ashiya, the experience is an intimate dialogue between chef and guest, built around fire, water, and rice. The omakase menu is a showcase of top-tier seasonal seafood, distinguished by masterful charcoal work that coaxes out subtle flavours and textures, and a foundational dashi (stock) of remarkable clarity.

Guests consistently praise the journey of the meal, from the multi-component hassun (seasonal appetizer platter) to the perfectly grilled fish. However, the true signature of Ninomae arrives at the end. The meal culminates not with one, but two types of donabe (clay-pot) rice, with seasonal variations like asparagus or rich crab rice being particular highlights. This is followed by a final piece of theatre: a warm fruit daifuku, its soft mochi skin wrapped around fresh fruit right before your eyes and served while still warm—a comforting, memorable finish.

While the food receives near-universal acclaim, securing a seat is a challenge, as regulars often book their next visit on the spot. Some reviewers note that the high price, especially at dinner, can feel borderline if a particular dish doesn't land perfectly, and the final bill can climb substantially with wine or sake pairings.
