Chef Doi serves a single chef's choice menu of roughly 15 to 20 courses built on Hokuriku produce. The setting is a converted Meiji-era sewing school near Katamachi in Kanazawa. There is no written menu. Each course is announced with an ink drawing of its ingredients, and guests guess what comes next. Plates layer several local ingredients into one bite: deer-heart broth over peanut mousse, a suppon (soft-shell turtle) croquette with turtle soup, a blood-sausage tart. The restaurant won a Tabelog Award Bronze every year from 2023 to 2026.

Reviewers agree that the invention never comes at the expense of flavour. The drawing menu and the honeycomb cut at the table for dessert come up in almost every account. Dishes named again and again include shiro-ebi (white shrimp) with caviar, okra flower stuffed with crab, guinea fowl, Noto whelk (bai-gai) and trout with ikura. Reviewers describe the service as warm and precise and say allergies are handled with care. They rate the non-alcoholic pairing as highly as the wine pairing.

Complaints are minor. The meal runs three to four hours, and the many courses add up to more food than some guests expect. One guest found the dishes hard to identify across the language barrier. A single 2017 review called the staff unwelcoming to foreigners, but recent reviews say the opposite.

Lunch and dinner are both set courses. Reviewers in 2025–2026 paid around ¥24,200 for the weekday Déjeuner course and around ¥30,250 for the Sunday dinner course. Drinks are extra. A kōji-fermented citrus drink cost ¥880, and sake by the glass ran about ¥1,100 to ¥4,400. The listing gives a typical spend of ¥20,000–29,999 for both lunch and dinner, and a 10% service charge is added.

By fine-dining standards it is good value. Several reviewers say the same meal would cost considerably more in Tokyo or Osaka. They also describe the wine as fairly priced and the portions as generous.

  • Getting there: take the bus from Kanazawa Station to the Katamachi stop (10 minutes), then walk 3 minutes. The restaurant is 855 m from Nomachi Station. It sits in a residential lane that taxi drivers often struggle to find, so have the map pin ready.
  • Booking: reservation only; walk-ins are not possible. Reviewers found online booking easier than expected, and one got a table the day before. Cancellations on the day or the day before cost 100%, and two to three days before cost 50%. To change the date or time on the day or the day before, phone the restaurant rather than using the website.
  • Age restriction: as a rule, children must be 12 or older.
  • Dress code: men in very casual clothing such as shorts and sandals are not admitted.
  • Payment: Visa, Mastercard, JCB, Amex and Diners are accepted. Electronic money and QR payments are not accepted. A 10% service charge applies.
  • Seating: 10 seats and one private room for 4. The restaurant cannot be booked for exclusive use.
  • Smoking: non-smoking throughout.
  • Parking: none; use nearby coin parking.
  • Dietary needs: the menu is chef's choice only, and the restaurant says it may not be able to accommodate many changes. Reviewers' allergy and no-raw-fish requests were met, so state yours when booking.
  • Time: allow 3 to 4 hours.
