Gyoza Ya (ぎょうざ屋) is a beloved institution in Takamatsu, a tiny counter-only shop dedicated to one thing: gyoza. Each dumpling is hand-wrapped and cooked to order using a method that is almost half-fried, resulting in an exceptionally thin, crackling skin on one side and a perfectly steamed top. The filling is light and juicy, with a pronounced cabbage and vegetable flavour that makes them feel surprisingly delicate.

Guests consistently praise the addictive quality of the gyoza, often ordering multiple plates of seven in a single sitting. The texture is the main draw: a crisp, lattice-like base giving way to a moist, flavourful interior. To cleanse the palate between plates, many regulars order the salt-dressed cucumber side dish (塩ダレきゅうり). An unusual but locally popular pairing recommended by some is a glass of cold milk.

The experience is not without its caveats. The shop is very small and can feel cramped, with queues of 10 to 40 minutes being common. A minority of recent reviews have also reported significant hygiene issues, including sightings of cockroaches and greasy surfaces, particularly in summer. While most visitors find the staff efficient, a few have described the service as blunt or noted perceived delays for non-Japanese customers ordering takeout.

Despite these points, Gyoza Ya offers excellent value. A typical visit costs between ¥1,000 and ¥2,000. Reviewers recently paid around ¥500–¥700 for a plate of gyoza, ¥600–¥650 for a beer, and about ¥300 for the cucumber side. For the quality of the cooking, it's a price that keeps locals and visitors lining up.
