Jidori Labo (地鶏らぼ) is less a restaurant and more a research counter dedicated to the art of yakitori. Located in Takamatsu, this tiny, five-seat establishment operates on a reservation-only, course-only basis, led by a chef-owner focused on aging high-grade chicken (a technique known as 熟成, or jukusei) and pairing it with rare and carefully selected sake.
