Tsubomi (壺味) is a small, bustling counter spot in Kyoto that has earned a devoted following for one dish in particular: a painstakingly prepared negi-yaki. Run by a friendly owner-chef and his family, the restaurant offers a theatrical and welcoming experience where the cooking is the main event. The star of the show is made with generous amounts of sweet Kujo green onions, slow-cooked at a low temperature for anywhere from 30 to over 60 minutes until deeply caramelized and tender.

Guests consistently praise this signature negi-yaki, often filled with beef tendon (suji), for its rich flavor. Other favorites include the large takoyaki (octopus balls), which are crisp on the outside and soft within, and classic okonomiyaki and yakisoba. The portions are generous, and the hospitality is a major draw, with the staff often speaking English and engaging warmly with international visitors.

The main drawback noted by almost every reviewer is the long wait for food, which is cooked to order by a single chef. Be prepared to wait 30–80 minutes for your main dish. The space is also very small, with limited counter seating and some standing room, and it can get hot and smoky as smoking is permitted inside.
