Quintessence (カンテサンス) is one of Tokyo's most lauded French restaurants, holding a place at the pinnacle of the city's dining scene since it relocated to Shinagawa's Gotenyama district in 2013. The experience is built on a single, uncompromising omakase menu guided by three principles: the quality of the ingredients, the precision of the cooking (cuisson), and the exactness of the seasoning. Guests are presented with a blank white menu, a gesture that, along with a strict no-photography rule in the main dining room, directs all attention to the food itself.

Diners consistently praise the kitchen's mastery of temperature and texture, particularly in fish and meat dishes that arrive with perfectly crisped skin over moist, tender interiors. Two desserts have become signatures and are mentioned in nearly every review: a delicate goat-milk bavarois, and a unique meringue ice cream dessert that is finished at the table. The multi-course dessert sequence and attentive, knowledgeable wine pairings are also frequent highlights.

However, the experience comes with certain caveats. The price is high, and reviewers note that the optional wine pairing can significantly increase the final bill. A minority of guests have found the seasoning heavy-handed, while others have reported feeling rushed toward the end of their meal or being bothered by noise from other tables. The strict ban on photography is also a point of contention for some.

For a special occasion, Quintessence is widely considered excellent value for a world-class meal. Reviewers in 2024 reported the dinner course at around ¥38,500 to ¥41,250. With a wine pairing, one guest paid ¥81,250 per person, while another party of two paid approximately ¥105,000.

  • Getting There: The restaurant is in the Garden City Shinagawa Gotenyama building. It is a 13-minute walk from Kitashinagawa, Osaki, or Gotanda stations, and an 18-minute walk from Shinagawa Station. A shuttle bus also runs from Gotanda and Shinagawa stations to the Garden City complex.
  • Reservations: Essential and extremely difficult to secure. Book well in advance via the OMAKASE platform or watch for cancellations.
  • Age Restriction: Guests must be of high school age or older (16+).
  • Dress Code: Elegant casual attire is recommended. Men's shorts and sandals are not permitted.
  • Seating: The restaurant has 30 seats, including two private rooms for 4 or 6 people. Photography is permitted only in the private rooms.
  • Payment: Visa, Mastercard, JCB, AMEX, and Diners Club cards are accepted. Electronic money and QR code payments are not. A 10% service charge is added to the bill.
  • Smoking: The entire establishment, including waiting areas, is non-smoking.
  • Parking: Paid public parking is available in the building, but the restaurant does not offer validation.
