MASUKI is a small, highly sought-after restaurant in Hiroshima that reimagines Chinese cuisine as a refined, multi-course tasting menu. Chef Masuki applies classical techniques and exacting fire control to the best local ingredients from the Hiroshima and Setouchi regions. The result is a style of modern Chinese food that guests describe as lighter than typical fare, yet intensely flavorful.

The omakase menu changes with the seasons, but certain signature dishes are praised year-round. Reviewers consistently single out the rich shark fin (フカヒレ) served in a pork-bone paitan broth, the exemplary char siu (叉焼), and a clear, herb-bright green yuzu ramen (青柚子ラーメン) that often concludes the meal. Other favorites include the sweet and sour pork (酢豚) and spicy chicken dishes like よだれ鶏 (yodare-dori). The extensive wine and Shaoxing rice wine list is also frequently commended.

The experience is not without its strictures. The room is tiny, with just a counter and one table, and all guests begin their meal at the same time, demanding punctuality.
