Seichan (清ちゃん) is a one-dish shrine to gyoza, run by its elderly owner from a tiny eight-seat counter in Hiroshima. The restaurant serves only one thing: small, one-bite dumplings, pan-fried to a deep crispness in a style known as age-yaki. The experience is as much about the ritual as the food: guests are instructed to place a mound of boiled bean sprouts and scallions into the gyoza's central pocket, then dip it in house-made ponzu and chilli oil.

Reviewers are near-unanimous in their praise for the gyoza's crunchy exterior and juicy, garlicky filling. The unique eating style, the quality of the house sauces, and the perfect pairing with a cold bottled lager are consistently highlighted. Many guests describe the warm, chatty owner and the simple, focused service as making them feel like they've been welcomed into a private kitchen.

The main challenge is accessibility. The phone for reservations is rarely answered, and seats are often booked out for months. Many hopeful walk-in guests report being turned away, even when seats appear to be free, and a few have noted the owner can be curt when busy. The menu is strictly gyoza and bottled beer; other drinks must be brought in or purchased from a nearby vending machine.

Despite the difficulty in securing a seat, reviewers call it excellent value. A typical dinner costs between ¥2,000 and ¥2,999. Recent guests paid around ¥550 for a plate of gyoza, with two plates costing ¥1,100. A large bottle of beer is about ¥650–¥750.

  • Reservations: Essential. You must book by phone, potentially weeks or months in advance. The phone line is often busy, and walk-ins are almost always turned away.
  • Getting There: Located in the Kanayamacho district, a 3-minute walk from Kanayamacho Station on the Hiroshima Electric Railway.
  • Payment: Cash only. Credit cards, electronic money, and QR code payments are not accepted.
  • Menu: The menu consists only of gyoza and bottled beer. Guests are permitted to bring their own non-alcoholic drinks.
  • Seating: There are only 8 counter seats. No private rooms are available.
  • Smoking: Smoking is permitted throughout the restaurant.
  • Parking: No parking is available.
