Isono Kazuo (いそのかづお) is a one-man operation, a tiny counter that opens late and serves one of Sapporo's most distinctive bowls of ramen until the early morning. The main event is the house specialty, 'Sapporo Black'—a shoyu ramen unlike any other. The broth is a lacquer-dark blend of tamari and soy sauce, intensely savory and heavy on garlic. What truly sets it apart is the pronounced char and smokiness from wok-fried vegetables, a flavor known as 'wok hei' that permeates the entire bowl.

Nearly every visitor comes for the Sapporo Black. Because it's a one-person operation, turnover is slow, and the shop sometimes sells out before its official closing time. The ramen itself is a love-it-or-hate-it affair: many find the very salty, oily, and garlic-heavy broth overpowering, and the small space can get smoky from the wok.
