Shinonome (東雲) is a highly regarded sushi counter in Sapporo that applies a precise Edo-mae philosophy to the rich bounty of Hokkaido. The chef's omakase course is built around a distinct red-vinegar (akazu) shari, which provides a firm, flavourful base for both traditional and inventive toppings sourced from local waters.
Guests consistently praise the quality and creativity of the otsumami (appetizer) sequence, which can be even more memorable than the nigiri. Highlights frequently mentioned include the rich monkfish liver (ankimo), sometimes served unconventionally with fig or a balsamic-like sauce, salt-koji marinated botan ebi, and luxurious Ezo abalone and Kitamurasaki uni.
